Avocado and egg sandwich

the ingredients:
eye eggs (1)
Two slices of wholegrain bread (toasted)
2 teaspoons olive paste
1/2 avocado
1 teaspoon lemon juice
Salt + black pepper (to taste)
Parsley (optional for garnish)

How to prepare:
1) Peel and mash the avocado with olive paste, lemon juice, salt and pepper
2) Spread the avocado mixture evenly on each slice of toast
3) Place the eggs on top, then the other slice of bread. Enjoy the wonderful taste
